SunButter Salad

Top Eight and Sesame Free


SUNBUTTER SALSA

3/4 cup SunButter Organic
1-3/4 cup lite coconut milk (TOTAL)
2 tablespoons olive oil
1/2 cup finely diced white onion
1/2 teaspoon ground turmeric
3/4 teaspoon ground cumin
1 tablespoon finely chopped cilantro
1 hard boiled egg, finely chopped
3 tablespoons thinly sliced white onions
1 teaspoon salt

SALAD
1 tablespoon olive oil, divided
1 (12-ounce) chicken breast, cut into bite size pieces
2 cups diced carrots
1 large red bell pepper, diced
1/2 cup chopped yellow onion

1/2 tablespoon ground cumin
1 large avocado
1 large lime, juiced
2 cups chopped roma tomatoes
1/2 cup chopped cucumber
1/2 cup chopped cilantro
1 cup fresh spinach
2 (1-quart) wide mouth mason jars

SUNBUTTER SALSA

I prepared the SunButter Salsa first so it had time to cool while I was assembling the salad. Mix the SunButter and 1 - 1/4 cups of coconut milk in a bowl or food processor, then set it aside.

In a pan over medium heat, heat the olive oil and add the white onion. Add turmeric, and cumin, stirring until the onions are soft. Add the blended SunButter and coconut milk mixture. Stir well and simmer for about 10 minutes. After about three minutes, I added another 1/2 cup of coconut milk so the mixture thinned out. 

Remove from heat and add cilantro, egg, and green onions. Gently stir to combine; set aside.


SALAD

In a large pan over medium/high heat, add 1/2 tablespoon olive oil, add chicken breast pieces and cook thoroughly. Once finished cooking, set chicken aside on a plate. 

Add remaining 1/2 tablespoon olive oil to skillet and keep heat on medium/high. Cook the carrots until they begin to soften, and add red peppers, onion, and ground cumin. Personally, I like the carrots to have a little bit of a crunch to them, and cooked them for about 8 minutes. 

Put the avocado and lime juice into a food processor and blend until smooth and creamy, or mash with fork to semi-smooth consistency. I'm a big fan of cilantro, so I added a bunch of cilantro to my guacamole! 


TO ASSEMBLE

Add as much or as little as you want. It's all up to you and your tastebuds! I put it in the Mason Jar in the following order...

2. Avocado Mixture

3. Cumin Roasted Vegetables

4. Chicken

5. Chopped Tomatoes and Cucumbers

6. Cilantro

7. Spinach
